Chocolate coffee cake
Rich Chocolate Cake that I often make for a dessert when expecting guests. Very quick and easy to make - all ingredients are combined together at the same time in 1 bowl. Always receive comments on how delicious it is.

- 200g soft butter
- 2 cups sugar
- 1 cup yoghurt or sour cream
- 3/4 cup cocoa
- 2 tsp baking soda
- 2 eggs
- 3 cups self rising flour
- 1 1/2 tsp Vanilla
- 1/4 tsp Salt
- 1 cup boiling strong coffee
Method
- Preheat oven to 160 degrees.
- Combine all ingredients in a bowl.
- Beat together for 1 minute and pour mixture into a lined cake tin.
- Cook for 1 hr or until springy to touch.
- Ice with Chocolate Icing when cool.
