Jasmin’s spiced apple tarts

Tart Pastry

  •  230g flour
  • 125g unsalted butter
  • 50g icing sugar
  • Zest of ¼ orange
  • 1 egg yolk
  • 2 Tbsp milk
  • 1 tsp cardamum

Apple Filling

  • 2 apples peeled and cubed
  • ½ Tbsp lemon juice
  • 14 g butter
  • 57g brown sugar
  • ½ tsp cinnamon
  • ⅛ tsp cloves
  • ⅛ tsp salt
  • 170g apple cider
  • 14g cornflour
  • 28g water
  • ½ Tbsp honey
  • ½ Tbsp vanilla
  • ½ tsp orange rind
  • ¼ cup walnuts chopped

Crème Patisserie

  • 2 egg yolks
  • 14 g caster sugar
  • 15g cornflour
  • 250ml milk
  • ¼ tsp vanilla
  • zest of half orange

Method

Tart Pastry

  1.  Place flour and butter in stand mixer. Beat on low until breadcrumbs. Add icing sugar and cardamum and beat till combined. Add egg yolk, zest and milk. Mix until just comes together.  Wrap and chill.
  2. Bake at 180°C for 15 minutes with baking beads.
  3. Remove baking beads, egg wash and then bake for a further  15 minutes.

Filling

  1. Place apples in large pan over med heat. Add butter and stir.  Add cider, cinnamon, cloves, salt and sugar, stir. Cook until apples have softened.
  2. Whisk cornflour and water then add to apples. Cook for 2-3 minutes.  Remove from heat and add orange, vanilla, lemon juice, honey  and walnuts.

Crème Pat

  1. Add egg yolks to caster sugar and whisk, add cornflour and whisk.
  2. Pour milk into saucepan with orange and vanilla until boiling.
  3. Pour half milk over eggs while whisking.
  4. Then pour back into saucepan and cook while whisking until thick.
  5. Cool in fridge.

Construction

  1. Assemble your tarts once all ingredients have cooled in the fridge. Scoop a small tablespoon of apple filling into the tart base. Pipe on a dollop of Crème Patisserie and decorate.
Top Tips

Make sure crème patisserie is cooked until firm so it holds its shape when piped and get it cooled down completely before using.
