Delightful casserole dish with sweet flavours based around tender lamb chops.

  • 1kg lamb shoulder chops
  • 1 apple
  • 2 medium grated carrot
  • 2 Tbsp Worcester sauce
  • 2 Tbsp cider vinegar
  • 1 tsp curry powder
  • 1 onion
  • 3 Tbsp flour
  • 3 Tbsp brown sugar
  • 2 Tbsp Tomato sauce
  • ⅔ cup warm water

Method

  1. Place into casserole dish or slow cooker the lamb chops, finely sliced apple, 2 medium sized grated carrots and sliced onion.
  2. Then in a small bowl whisk together the flour, brown sugar, Worchester Sauce, cider vinegar, curry powder, tomato sauce and warm water.
  3. Tip over chops and allow to marinate in the fridge for 2 hours.
  4. Once baked add to a plate of good old mashed potatoes and minted peas.
