Spicy chicken and tomato arrabbiata

  • 225g dried penne pasta
  • 1 small onion, finely chopped
  • 1 clove garlic, crushed
  • 400g skinless, boneless chicken breasts, diced
  • 525g jar HEINZ [SERIOUSLY] GOOD™ Spicy Tomato & Chilli Pasta Sauce
  • 2 Tbsp capers (optional)
  • Grated Parmesan
  • Fresh rocket or basil leaves

Method

  1. Cook penne pasta in lightly salted, boiling water for 10-12 minutes, until pasta is tender. While pasta is cooking heat a dash of oil in a frying pan. Add onion and garlic and stir fry over a medium heat until onion softens. Add diced chicken and continue cooking until chicken is cooked.
     
  2. Pour over HEINZ [SERIOUSLY] GOOD™ Spicy Tomato & Chilli Pasta Sauce. Stir and heat the sauce until hot. Add capers if wished.
     
  3. Drain cooked pasta. Return to the pan and pour over Pasta and chicken sauce. Toss to mix. Serve garnished with grated Parmesan and fresh rocket or basil leaves. 

Tips

  • Cook pasta in a large pot to allow it to cook properly. If you use too small of a pot, the water temperature drops too much when you add the pasta so it takes a long time to heat back up. This makes your pasta mushy and you'll often find it clumps together.

  • Why is it called arrabbiata sauce?
    • The main ingredients to this sauce are garlic, tomatoes, and red pepper flakes for spice. The word “arrabbiata” in Italian actually means “angry” – this refers to the spiciness you get from the red pepper! If you don't do well with spice, you can adjust the flavour to your liking.
  • Does arrabbiata typically include chicken?
    • Despite appearances, there's just one type of arrabbiata sauce in Italy and it doesn't include any kind of meat, just tomato, and a few other ingredients.
