Three ways with instant coffee

Coffee is a great pantry staple, and much more than a morning cuppa! It can add flavour to many dishes. Check out these recipes for Vietnamese iced coffee, quick tiramisu waffles and a steak rub that will make your steak taste divine.

Coffee steak rub (makes 2)

  • 1 Tbsp Special Blend Instant Coffee 
  • 2 tsp brown sugar 
  • 1 tsp garlic powder 
  • ¼ tsp cayenne pepper 
  • ½ tsp paprika
  • 1 tsp sea salt flakes 
  • ½ tsp ground black pepper
  • 2 sirloin, rump or scotch steaks 
  • Green salad or your favourite sides, to serve

Vietnamese iced coffee (makes 1 cup)

  • 3 Tbsp Special Blend Instant Coffee 
  • 1 cup boiling water
  • 3 Tbsp sweetened condensed milk 
  • Ice

Quick tiramisu waffles (serves 2)

  • 1 Tbsp Special Blend Instant Coffee 
  • ½ cup maple syrup
  • 4 premade waffles
  • 1/3 cup mascarpone  
  • Shaved chocolate, to garnish

Method

Coffee steak rub

  1. In a bowl, combine the instant coffee, brown sugar, garlic powder, cayenne, paprika, sea salt and black pepper. Ensure that all the ingredients are well incorporated. 
  2. Rub both steaks on each side with the coffee rub mixture, then leave to rest for 10 minutes. 
  3. Preheat a frying pan to a medium high heat, and drizzle with a generous amount of olive oil. Cook the steaks to your desired level, then leave to rest for about 5 minutes and serve with your favourite sides. 

Vietnamese iced coffee 

  1. In a jug, mix together the instant coffee and boiling water. Spoon the sweetened condensed milk into a glass, then pour the coffee over top. Stir to combine. 
  2. Fill your serving glass with ice. Pour the coffee over ice and enjoy. 

Quick tiramisu waffles (serves 2) 

  1. In a small saucepan, combine the instant coffee and maple syrup. Place over a medium heat and stir until the coffee has dissolved. Leave to cool slightly. 
  2. To assemble, drizzle some of the coffee maple syrup over the waffles, then stack two together. Top each stack with ½ of the mascarpone, then drizzle with more coffee maple syrup and garnish with shaved chocolate. Serve and enjoy.
