  • 1.5 - 1.7kg pork shoulder
  • 1 packet Pams Taco Mexican Spice Mix
  • 2 onions, thinly sliced
  • Grated zest and juice 2 oranges
  • 2 Tbsp apple cider vinegar
  • 1 tsp salt
  • 1 pack Pams Flour Tortillas
  • 1 bag Pams Superfoods Super Slaw

Cookware: Slow cooker

Method

1. Remove and discard the pork skin. Rub the pork shoulder all over with the spice mix and put into a slow cooker along with the onion, orange zest and juice and apple cider vinegar. Season generously with salt and pepper.
2. Cook in the slow cooker on low for 8 hours. The meat should be very tender.
3. Pour the cooking liquid into a small saucepan and reduce by half. Shred the pork, tearing apart the meat with two forks and add back to the liquid in the slow cooker.

To serve, put some of the red cabbage slaw in each tortilla and spoon over some pulled pork and its cooking juices. Eat immediately.

Recipe notes

Pork – For the ultimate juicy pulled pork carnitas, full of flavour, the best cut of pork to use is pork shoulder roast (otherwise known as pork butt). The cut can be bone in or bone out, but needs to be skinless so it can be rubbed with the spice mix. Boneless pork shoulder roast is the easiest option to shred.

Spice – If you’re seeking some extra heat in your pulled pork tacos, sprinkle some chilli flakes or hot sauce on your pulled pork once it’s cooked.

Storing leftovers – Pulled pork can be refrigerated for up to 3 days or frozen for up to 3 months. Reheat in the microwave or frying pan.

What should you serve with pulled pork tacos?
As a staple Mexican food, pulled pork tacos are delicious with all of the Mexican trimmings. Some of our favourite additions to any carnitas recipe are this Tomato salsa, and this tasty Homemade guacamole. For a little creaminess, you can also add some mayonnaise, sour cream or aioli through the slaw, or you can make the recipe Kiwi with some Kiwifruit salsa - simply dice 2 kiwifruits and mix with chopped chilli or jarred jalapeños, coriander, lime zest and lime juice and diced red onions. Any of the Bean supreme DIY taco platter options are also delicious additions.

What should you do with slow cooker pork leftovers?
One of the best things about pulled pork is its ability to freeze well. It can be reheated later without any loss of quality, making it perfect to stash in your freezer. Add the slow cooker pork to tortilla chips and your favourite toppings for quick and easy pork nachos or make it into burritos, quesadillas, enchiladas or sliders.
