  • 3 Eggs
  • 1 cup Milk
  • 3 tbsp fat or oil (see Recipe notes – Oil/Fat)
  • 1 cup flour
  • Pinch of salt

Cookware: Muffin tins.

 

Method

  1. Preheat the oven to 190 degrees Celsius
  2. In a bowl, beat the eggs with milk and stir in sifted flour. Add seasoning. Set aside and rest for at least 30 minutes if possible. 
  3. Divide the fat or oil evenly between the twelve cups of a muffin tin. Place tin in oven to warm the oil/fat - no more than 2 minutes. Remove tin from oven, and distribute batter evenly in the muffin spaces.
  4. Bake in preheated oven for 5 minutes. Reduce oven heat to 175 degrees C and bake for a further 25 minutes until your Yorkshire puddings are puffed up with a golden top.

Recipe notes:

Oil/fat – One of the keys to getting the perfect Yorkshire pudding is selecting the right fat. It’s important you use a fat that will get hot enough to puff up your puddings. We recommend lard, beef drippings, bacon fat, duck fat, olive oil, vegetable oil or sunflower oil.

Cooking time – Make sure you leave your Yorkshire puddings in until they’re ready. Yorkshire puddings always look darker through the door than they actually are. Leave them in the oven until they look deep golden-brown, or you'll end up with pancakes.

Gravy – To make a simple gravy to go with your Yorkshire puddings, you’ll just need about 4 tbsp of flour and 2 ½ cups of stock. Once you’ve removed your roast beef from the roasting dish (assuming you’re also doing a roast!), place the dish on the stove over medium heat. Once the fat starts to bubble, add in flour, and cook for 1 minute. Next, pour in beef stock and mix well. Add salt and pepper to taste, and simmer until sauce is the correct consistency. Strain into a bowl.

Make ahead – It’s simple to make batches of Yorkshire puddings in advance and freeze them. Cook them as usual and then store in freezer bags, then heat in the oven from frozen to serve.

What should I serve with Yorkshire pudding?

How do you stop Yorkshire puddings from deflating?

Resting your batter for at least 30 minutes will help your puddings to rise properly rather than just deflating. You can skip this step if you’re in a hurry, but just be aware your puddings will probably be a little flatter.
