Bluff oysters

Bluff oysters are thought to be the best in the world. These delicate and tender shellfish are a unique product as they are from the last wild oyster fishery in the world and are only available for a certain amount of time each year. The fishing season is from March (to be announced).
Marina Fish and Oysters is a family run business who supply Bluff oysters to New World, fresh off the boat. Greg Mead who skippers their vessel, The Southern Enterprise, is the 5th generation in their family to fish for Bluff Oysters.
Once caught they are processed and packed at the family factory in Bluff. What inspires this family business, is to not only continue their legacy but to supply the public with a unique and quality product to enjoy. They always look forward to the first day of the season, just as much as the public look forward to their first taste for the season.

Asian inspired
Serve with lime juice, sliced red chilli and fresh coriander.

Deep fried in beer batter
Create a beer batter using 3/4 cup plain flour and 200ml beer of your choice. Serve with buffalo sauce and blue cheese.

Baked cheese and bacon
Lay oysters in a baking dish, top with grated cheddar and cooked bacon then bake at 200 degrees celsius fan bake until the cheese has melted. Garnish with sliced spring onion and serve.

Mignonette Dressing
Serve in mignonette dressing made of 2 shallots peeled, finely diced and ¼ cup red wine vinegar.

Keep it classic
With a squeeze of lemon and a sprinkle of pepper.
