Anzac biscuits

With golden syrup, coconut and a hint of cinnamon these Anzac biscuits are deliciously soft and chewy. It’s a quick and easy recipe that’s sure to become your go-to.

  • 1 cup plain flour
  • 1 ½ tsp ground cinnamon
  • 1 ½ cups rolled oats
  • 1 cup desiccated coconut
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 125g butter, cubed
  • ¼ cup golden syrup
  • 1 tsp baking soda

Method

  1. Preheat your oven to 160°C.
  2. In a medium bowl, sift together flour and cinnamon. Add rolled oats, coconut, caster sugar and brown sugar. Mix well to combine.
  3. Melt together butter, golden syrup and two tablespoons of water in a small saucepan over low-medium heat. Remove from the heat and stir in baking soda. Add the butter mixture to the flour mixture and stir until well combined.
  4. Roll tablespoons of the biscuit mixture into balls and place on the prepared tray about 5cm apart. Press down to flatten slightly and bake for 15-20 minutes or until golden brown.
  5. Set aside to cool for 5 minutes, before transferring to a wire rack to cool completely.

Top tip: For a chewy Anzac biscuit bake for 15-16 minutes and for a crunchier biscuit cook for 18-20 minutes.
