Easy Christmas cake
Inspired by traditional Christmas cake, this fruit cake is an easy-to-throw-together version with only eight ingredients.

- 1 kg Pams dried fruit cake mix
 - 2 large oranges
 - 1 cup brown sugar
 - 125g Pams pure butter
 - 2 tsp mixed spice
 - 3 eggs, beaten
 - 2 cups self-raising flour
 - ¼ cup whole almonds
 
Method
- Grease and line the base and sides of a 23cm round cake tin with two layers of baking paper.
 - In a large saucepan, combine the dried fruit, orange zest, half a cup of freshly squeezed orange juice, brown sugar, butter and mixed spice over medium heat. Bring to a boil, then remove from the heat and transfer to a large bowl. Set aside to cool to room temperature.
 - Meanwhile preheat your oven to 160°C bake. Stir the eggs into the cooled fruit mixture, then sift in the flour and fold until just combined.
 - Transfer the mixture to the prepared cake tin and arrange the almonds on top, pressing gently into the mixture. Bake for 1 hour 15 minutes- 1 hour 25 minutes, or until firm and a skewer inserted into the centre comes out mostly clean.
 - Cool in the tin completely before slicing.
 
Top tip: Glaze your Christmas cake with two tablespoon of melted apricot jam mixed with a teaspoon of water for a glossy finish. 
For a boozy cake, swap out a quarter of the orange juice for a quarter cup of brandy.
