
Vegan gingerbread loaf

A super simple loaf that comes together in one bowl. This vegan gingerbread loaf is a healthier morning tea snack. Made with molasses, a delicious blend of spices and unsweetened applesauce.
Ingredients
½ cup unsweetened applesauce
½ cup coconut oil, melted
1 ½ cup dairy free milk of your choice
⅓ cup molasses
¾ cup coconut sugar
2 tsp apple cider vinegar or white vinegar
2 cup wholemeal flour
1 cups plain flour
1 Tbsp baking powder
1 tsp baking soda
2 ½ tsp ground cinnamon
2 ½ tsp ground ginger
2 tsp ground nutmeg
Method
Preheat your oven to 160°C bake. Grease and line a loaf tin.
In a large bowl combine applesauce, coconut oil, milk, molasses, coconut sugar and vinegar. Whisk until well combined.
Add wholemeal flour, plain flour, baking powder, baking soda, cinnamon, ginger, nutmeg and a pinch of salt. Fold until just combined, then pour into the prepared loaf tin.
Bake for 1 hour or until a skewer inserted into the centre comes out clean.
Leave to cool completely before slicing as desired. Serve and enjoy.
Top tip: Super if served with coconut yoghurt and seasonal fresh fruit.
