Vegan gingerbread loaf
A super simple loaf that comes together in one bowl. This vegan gingerbread loaf is a healthier morning tea snack. Made with molasses, a delicious blend of spices and unsweetened applesauce.

- ½ cup unsweetened applesauce
- ½ cup coconut oil, melted
- 1 ½ cup dairy free milk of your choice
- ⅓ cup molasses
- ¾ cup coconut sugar
- 2 tsp apple cider vinegar or white vinegar
- 2 cup wholemeal flour
- 1 cups plain flour
- 1 Tbsp baking powder
- 1 tsp baking soda
- 2 ½ tsp ground cinnamon
- 2 ½ tsp ground ginger
- 2 tsp ground nutmeg
Method
- Preheat your oven to 160°C bake. Grease and line a loaf tin.
- In a large bowl combine applesauce, coconut oil, milk, molasses, coconut sugar and vinegar. Whisk until well combined.
- Add wholemeal flour, plain flour, baking powder, baking soda, cinnamon, ginger, nutmeg and a pinch of salt. Fold until just combined, then pour into the prepared loaf tin.
- Bake for 1 hour or until a skewer inserted into the centre comes out clean.
- Leave to cool completely before slicing as desired. Serve and enjoy.
Top tip: Super if served with coconut yoghurt and seasonal fresh fruit.
