Vegan gingerbread loaf

A super simple loaf that comes together in one bowl. This vegan gingerbread loaf is a healthier morning tea snack. Made with molasses, a delicious blend of spices and unsweetened applesauce.

Ingredients

  • ½ cup unsweetened applesauce

  • ½ cup coconut oil, melted

  • 1 ½ cup dairy free milk of your choice

  • ⅓ cup molasses

  • ¾ cup coconut sugar

  • 2 tsp apple cider vinegar or white vinegar

  • 2 cup wholemeal flour

  • 1 cups plain flour

  • 1 Tbsp baking powder

  • 1 tsp baking soda

  • 2 ½ tsp ground cinnamon

  • 2 ½ tsp ground ginger

  • 2 tsp ground nutmeg

Method

  1. Preheat your oven to 160°C bake. Grease and line a loaf tin.

  2. In a large bowl combine applesauce, coconut oil, milk, molasses, coconut sugar and vinegar. Whisk until well combined.

  3. Add wholemeal flour, plain flour, baking powder, baking soda, cinnamon, ginger, nutmeg and a pinch of salt. Fold until just combined, then pour into the prepared loaf tin.

  4. Bake for 1 hour or until a skewer inserted into the centre comes out clean.

  5. Leave to cool completely before slicing as desired. Serve and enjoy.

Top tip: Super if served with coconut yoghurt and seasonal fresh fruit.
