15 minute quick chilli

A one-pot wonder that’s fit for feeding the whole whānau. Our quick chilli is no-fuss and simply worth the mere 15 minutes it takes to make. Serve your chilli over steamed rice for a wholesome meal.

Ingredients

  • 500g beef mince

  • 1 can (425g) mild chilli beans

  • 1 can (410g) corn kernels, drained

  • 2 cans (800g) diced tomatoes with chilli and herb

  • 1 packet (50g) burrito Mexican spice mix

Method

  1. Bring a drizzle of oil to medium-high heat in a large pot.

  2. Add the mince and cook for 5 minutes or until browned.

  3. Stir in the chilli beans, corn kernels, diced tomatoes and Mexican spice mix. Season with salt and pepper.

  4. Bring to a simmer, cover and cook for 10 minutes or until heated through.

  5. Divide the chilli into bowls, serve and enjoy!

Top tip: Top off your flavoursome bowl of chilli with a handful of grated cheese and a dollop of sour cream.
