
Meat balls with satay sauce

These tasty meatballs are wonderfully easy to prepare and baking makes them easy to cook. The satay sauce is sure to be a winner, but they’re equally good with BBQ sauce or tomato sauce.

Ingredients
Meatballs:
750g mince
2 cups bread crumbs
1 chopped onion
juice of 1 lemon
2 teaspoons chicken stock
2 teaspoons basil
Sauce:
1 tablespoon olive oil
2 teaspoons crushed garlic
2 teaspoons ginger
1 teaspoon coriander
2 tablespoons soy sauce
2 tablespoons lemon juice
hot chilli sauce
¼ cup brown sugar
2 tablespoons peanut butter
Method
Meatballs:
Blend all ingredients in a blender.
Form into balls.
Bake at 180C for 30 minutes
Sauce:
Heat the above ingredients.
Combine 2 tablespoons of cornflour and 1 cup of water then add to the mixture to thicken.
Serve on rice with a side salad.
