Meat balls with satay sauce

These tasty meatballs are wonderfully easy to prepare and baking makes them easy to cook. The satay sauce is sure to be a winner, but they’re equally good with BBQ sauce or tomato sauce.

Ingredients

  • Meatballs:

  • 750g mince

  • 2 cups bread crumbs

  • 1 chopped onion

  • juice of 1 lemon

  • 2 teaspoons chicken stock

  • 2 teaspoons basil

  • Sauce:

  • 1 tablespoon olive oil

  • 2 teaspoons crushed garlic

  • 2 teaspoons ginger

  • 1 teaspoon coriander

  • 2 tablespoons soy sauce

  • 2 tablespoons lemon juice

  • hot chilli sauce

  • ¼ cup brown sugar

  • 2 tablespoons peanut butter

Method

Meatballs:

  1. Blend all ingredients in a blender.

  2. Form into balls.

  3. Bake at 180C for 30 minutes

Sauce:

  1. Heat the above ingredients.

  2. Combine 2 tablespoons of cornflour and 1 cup of water then add to the mixture to thicken.

Serve on rice with a side salad.
