One pan taco rice

Gather the whānau to enjoy this easy-as one pan beef taco rice. It’s a surefire way to spice up those taco Tuesday dinners.

Ingredients

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 450g beef mince

  • 1 packet (40g) Mexican spice mix

  • 1 ½ cups long grain rice

  • 1 ½ cups frozen mixed veges

  • 3 cups beef stock

  • 1 - 1 ½ cups grated tasty cheese

Method

  1. Preheat your oven to 180°C fan bake. In a large frying pan, heat a drizzle of oil over medium-high heat. Cook the onion and garlic for a few minutes or until softened.

  2. Add beef mince and Mexican spice mix. Season with salt and pepper and cook for 4-5 minutes or until browned.

  3. Stir through the rice and mixed veges, then pour in beef stock and bring to a boil.

  4. Once boiling, cover and place in the oven to bake for 25-30 minutes or until the rice is tender and the liquid has absorbed.

  5. Sprinkle the cheese over the top and return to the oven for a further 8-10 minutes or until the cheese has melted. Serve and enjoy.

Tips:

  • Throw in a can of drained black beans or kidney beans to your taco rice for a filling meal. Serve with sour cream or salsa, sliced spring onion and fresh coriander.
