Slow cooked BBQ beef brisket

Splendid for a summer gathering, this slow cooked beef is finished off on the BBQ for a succulently smokey brisket. Serve it up with coleslaw and crispy wedges for a delicious outdoor meal with whānau and friends.

  • 1-1.2kg beef brisket
  • 2 tsp ground paprika
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • ½ cup smokey BBQ sauce
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp honey
  • 1 ½ cups beef stock
  • 2 sprigs rosemary
 

Method

  1. Preheat your oven to 145°C bake. Season the beef with salt and pepper, sprinkle over the paprika and rub it into the beef. 

  2. Bring a drizzle of oil to medium-high heat in a large oven-proof dish. Cook the onions and garlic for 4-5 minutes or until translucent. 

  3. Add the BBQ sauce, Worcestershire, honey and beef stock and bring up to a simmer. 

  4. Nestle the seasoned beef into the dish and add the rosemary. Cover and place in the oven to cook for 3-3 ½ hours or until tender, basting every hour. Reserve the pan juices.

  5. Preheat your BBQ to medium heat and brush with oil. Place the beef on the BBQ and cook for 5-8 minutes on each side or until browned and caramelised. Transfer the beef to a plate or board, cover and set aside to rest for 15-20 minutes before slicing. Serve with the reserved pan juices.
