
Sparkling iced tea

An Arnold palmer-inspired drink combining freshly made iced tea with lemonade. It’s a bubbly surprise infused with lemony fruity flavours that is great for sharing.
Ingredients
6 lemons
½ cup honey
4 earl grey tea bags
Fresh seasonal fruit (we used strawberries and blueberries)
Lemonade
Method
In a saucepan, combine the juice of four lemons, honey and three cups of water over medium-high heat. Bring to a simmer and cook for 5 minutes or until the honey has dissolved.
Remove from the heat and add the tea bags. Leave to steep for 10 minutes before removing and discarding the tea bags.
Transfer to a jug and place in the refrigerator to cool for a minimum of 2 hours or until chilled.
Half fill short serving glasses with ice. Add fresh seasonal fruit, then pour over the cooled iced tea to fill the glasses halfway. Slice the remaining lemon.
Top up each glass with lemonade, then garnish with lemon slices.
Top tip: Make this sparkling iced tea in a large pitcher and prepare in advance for a delicious drink that your guests will love.
