
Bacon and feta crispy croissant

Transform stale croissants into a meal sensation with these bacon, pesto and feta crispy croissants. Toasted in butter with a drizzling of honey and topped with savoury toppings, it’s an indulgent and enticing option any time of the day.
Ingredients
4 croissants
Honey
Basil pesto
8 cooked bacon rashers
Rocket or seasonal salad leaves
Feta Cheese
Method
Using a rolling pin, flatten the croissants to around 1cm in thickness.
In a large frying pan, melt a knob of butter over a medium heat.
Add the croissants, drizzle with honey and toast for a few minutes on each side or until golden brown.
Place the croissant on a plate and spread the basil pesto over each croissant. Top with bacon, rocket and feta.
Serve and enjoy.
