Words cannot describe just how sensational these fluffy pancakes are! They’re the best breakfast food any day of the week. Our tamariki are particularly fond of this one.

Ingredients

  • 1 cup plain flour

  • 2 tsp baking powder

  • ¼ tsp baking soda

  • 2 Tbsp caster sugar

  • 1 egg, beaten

  • ¾ cup Value milk

  • 2 Tbsp pure butter, melted + extra for cooking

Method

  1. In a large bowl, sieve the flour, baking powder, baking soda and caster sugar. Whisk to combine.

  2. Create a well in the centre of the flour and add the egg, milk and butter. Stir until just combined.

  3. Bring a large frying pan to low-medium heat. Grease with melted butter, then add spoonfuls of the pancake batter to the pan.

  4. Cook for a few minutes or until bubbles appear on the surface, then flip and cook for a further few minutes until cooked through.

  5. Serve and enjoy.

Top tips:

  • The trick to fluffy pancakes is to not overmix the batter and let it rest for a few minutes before adding to the pan.

  • Cook your pancakes on a medium heat: hot enough to immediately make a drop of water sizzle.

  • Flip your pancakes when bubbles form on the surface and stay open.

  • Wipe the pan off every few pancakes and add fresh butter to avoid that burnt-butter-taste.
