Sausage breakfast burrito

Start your day off on the right foot with these breakfast sausage burritos that will have the whole whānau excited for breakfast time. Sausages, hash browns, scrambled eggs, cheese and mayo wrapped in a tortilla, breakfast doesn’t get much better than this!

  • 4 Value potato hash browns
  • 3 Pams precooked sausages, sliced
  • 4 eggs, beaten
  • 4 Value white tortillas
  • ½ cup Pams Edam cheese, grated
  • ¼ cup Pams classic whole egg mayonnaise

Method


  1. Cook the hash browns as per the pack instructions.
  2. In a large pan over medium-high heat, cook the sliced sausages with a drizzle of olive oil until golden brown and heated through. Remove from the pan and cover to keep warm.
  3. To the same pan, add another drizzle of olive oil if needed and scramble the eggs to your desired consistency. Warm the tortillas.
  4. Assemble the burritos by topping the tortillas with the hash browns, sausages and scrambled eggs. Sprinkle with grated cheese, top with a dollop of mayonnaise and season with salt and pepper. 
  5. Fold in the two sides of the tortilla, roll up tightly into a burrito and serve while hot.

Top tip: Add a small handful of baby spinach leaves to each burrito and get a serve of veggies in before you even start the day.
