BBQ Spice Rubbed Chicken

Get grilling these summer holidays with this BBQ spice rubbed chicken with a homemade spice rub. It’s incredibly easy to throw together and will make entertaining a breeze. Serve it up with a side of BBQ grilled corn salad for a meal with friends and whānau.

Ingredients

  • 2 Tbsp brown sugar

  • 1 Tbsp smoked paprika

  • ½ tsp cayenne pepper

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 ½ tsp oregano

  • 6 chicken thighs

Method

  1. Preheat your BBQ to medium heat.

  2. Prepare the spice rub by combining brown sugar, smoked paprika, cayenne pepper, garlic powder, onion powder, oregano, salt and pepper in a small bowl.

  3. Pat the chicken dry with a paper towel. Sprinkle over the spice rub and rub into the chicken.

  4. Brush your BBQ with oil, then cook the chicken for a 4-5 minutes on each side or until golden brown.

  5. Cover and cook for a further 15-20 minutes or until cooked through.

Top tip: Try this spice rub on your favourite protein or vegetables, it works incredibly well on pork and corn.
