
Mild Thai Green Chicken Curry

Ingredients
1 Simply Dinner Mild Thai Chicken Green Curry Kit (each kit includes 1½ cups rice, 400g chicken breast, 1 carrot, 250g green beans, 300g Annabel's Go To Fragrant Curry Sauce, 400ml coconut cream)
Cooking Oil
Salt and pepper
Water
Optional Extras:
Fresh corriander
Method
Place rice in a large pot with 2¼ cups water and a little salt. Bring to a boil over a high heat, then cover and reduce to lowest heat. Cook for 13 minutes then turn off the heat and allow to stand without lifting the lid.
While rice is cooking, cut chicken into thin strips. Peel carrots, halve lengthwise and thinly angle slice. Trim and halve the beans.
Heat 1 tbsp oil in a large frying pan or pot over high heat. Add chicken and carrots and stir-fry for about 5 minutes until chicken is no longer pink.
Add Annabel’s Go To Fragrant Curry Sauce, coconut cream and ½ cup water and bring to a simmer. Reduce heat, add beans, cover and simmer for 10 minutes. Check seasoning and adjust to taste with salt and pepper.
To Serve:
Fluff the rice with a fork. Divide between 4 bowls and top with the green curry. Enjoy!
Optional:
If using coriander, chop coarsely and sprinkle over curry to serve.
