Great for an outdoor setting, these Greek-inspired lemon and feta chicken drumsticks are super succulent and great to nibble on. Dressed with a lemon parsley dressing and crumbled feta, they’re packed with punchy flavours. Make it a meal with a side of Greek salad tossed with crispy lettuce leaves.
Ingredients
8 chicken drumsticks
3 cloves garlic, minced
2 tsp dried oregano
2 lemons
Large handful of fresh parsley, roughly chopped
100g feta
Method
In a large bowl combine drumsticks, two garlic cloves, oregano, the juice and zest of one lemon and a drizzle of olive oil. Season with salt and pepper. Cover and place in the fridge to marinade for 2-4 hours.
Grill the drumsticks over medium heat on a preheated and oiled BBQ or grill pan for 30 minutes or until cooked through.
To make the dressing, whisk together a drizzle of olive oil, the zest and juice of the remaining lemon, the remaining garlic and half of the parsley. Season with salt and pepper.
Spoon the dressing over the drumsticks, crumble over the feta and sprinkle over the remaining parsley. Serve and enjoy.
Top tip: These drumsticks can also be cooked in the oven on a wire rack on top of a baking tray for a hands-free alternative. Cook in a preheated oven at 200°C fan bake for 25 minutes or until cooked through and golden brown.
