Quick chicken gyros

Easy 15-minute chicken gyros on soft garlic pita breads make for a simple but satisfying dinner solution. Serve with tzatziki and oven-baked fries sprinkled with paprika and crumbled feta for an unrivalled Greek-inspired meal.

Ingredients

  • 500g chicken breast, diced

  • ¼ cup natural Greek yoghurt

  • 3 garlic cloves, minced

  • 2 tsp dried oregano

  • ½ lemon

  • 8 garlic pita bread, warmed

  • 1 cup shredded lettuce

Method

  1. Combine chicken in a large bowl with yoghurt, a tablespoon of olive oil, garlic, oregano, juice of the lemon and salt and pepper.

  2. Bring a large pan to medium-high heat with a drizzle of olive oil. Cook the chicken for 4-5 minutes, or until browned and cooked through.

  3. Top the warmed pitas with the lettuce, followed by the chicken pieces.

  4. Serve and enjoy.

Top tip: Fill your gyros with some diced tomato and thinly sliced red onion along with the lettuce. Finish with a handful of roughly chopped parsley to add a pop of freshness.
