Easy no bake oatmeal cookie bars
Snacking on the go is made easier with these no bake oatmeal cookies bars. They’re a quick and tasty treat prepared in a food processor, pressed into a tin and set in the fridge.

- 2 cups pitted dates
 - 2 cups rolled oats
 - ¼ cup desiccated coconut
 - 1 tsp vanilla extract
 - 1 Tbsp maple syrup
 - ½ cup dark chocolate chips or chopped dark chocolate
 - ⅓ cup dried cranberries
 
Method
- Place the dates in a medium bowl and cover with hot water. Set aside to soak for 10 minutes, then drain.
 - Meanwhile, in a food processor, blitz the rolled oats into a fine crumb.
 - Add the drained dates, desiccated coconut, maple syrup, vanilla extract and a pinch of salt. Pulse until well combined, then add the chocolate chips and cranberries.
 - Pulse a few times to mix through, then press into a lined square tin.
 - Place in the fridge for 1 hour to set, then remove from the tin and slice into portions.
 - Serve and enjoy or store in the fridge for up to 14 days.
 
Tips:
- For extra indulgence, drizzle extra melted dark chocolate over the cookie bars.
