S'mores brownie one pan

Whip out your non-stick fry pan for this deliciously divine s’mores-inspired brownie one pan. Best served warm, this chocolate brownie sits on a buttery biscuit base and is topped with toasted marshmallows for an unforgettable dessert.

  • 150g digestive or plain biscuits, crushed
  • 160g butter, melted
  • 1 box (560g) chocolate brownie mix
  • 2 eggs
  • Marshmallows

Method

 

  1. Preheat your oven to 160°C fan bake and grease a non-stick fry pan.
  2. In a large bowl combine digestive biscuits and 60g of butter. Mix until well combined, then press into the bottom of the fry pan.
  3. Prepare the brownie mix according to the package instructions with the eggs, remaining butter and a tablespoon of water if required. Pour over the biscuit base and place in the oven to bake for 30-35 minutes or until a skewer inserted comes out slightly sticky but mostly clean.
  4. Remove from the oven and increase the temperature to 200°C fan grill.
  5. Arrange marshmallows over the brownie, then return to the oven for a further 5 minutes or until the marshmallows have toasted. Serve warm.

Tips:

  • Garnish this moreish brownie with extra biscuit chunks and melted chocolate or chocolate sauce for a special treat.
  • If you’ve got a blow torch, use that to toast your marshmallows instead of grilling in the oven.
