
Cheats melon sorbet

Navigate through the hot weather with this three ingredient cheats melon sorbet. It’ll make you feel both refreshed and delighted with every spoonful.
Ingredients
1 rockmelon or honeydew
3 Tbsp caster sugar
1 lemon
Method
Remove the skin and seeds of the rockmelon, cut into cubes and place on a lined baking tray. Place in the freezer for a minimum of 4-6 hours or overnight until frozen.
In a small bowl whisk together caster sugar and the zest and juice of the lemon until well combined.
Blitz the frozen rockmelon and sugar mixture in a food processor until smooth, scraping down the sides as necessary.
Serve immediately or transfer into a container and store in the freezer.
Tips:
Present your beautiful melon sorbet with a basil garnish to finish.
Leave your sorbet out of the freezer for at least 10 minutes before serving, to ensure easier scooping.
