
Creamy coffee cake

Cheats dessert made with a cream cheese whip, digestive biscuits soaked in coffee and a marbled chocolate top.
Ingredients
250g condensed milk
200g cream cheese, room temperature
2 ½ cup cream
⅓ cup milk, warmed
¼ cup espresso or instant brewed coffee
400g digestive biscuits
100g dark chocolate, chopped
100g white chocolate, chopped
Method
In a large bowl, beat the condensed milk and cream cheese until smooth. Add two cups of cream and whip until light and fluffy.
Combine the milk and espresso in a small bowl. Dip half of the biscuits in the milk and line the bottom of a serving dish.
Spoon half of the whipped cream filling over the cookies and spread into an even layer. Repeat the layers.
Place the dark chocolate and a third cup of remaining cream in a microwave safe bowl. Microwave in 30 second increments until completely melted, stirring well between each. Repeat with the white chocolate and remaining cream.
Place spoonfuls of the dark and white chocolate over the top of the cake and use a spoon to marble the chocolate. Serve and enjoy.
