Giant cookie pies
Indulgently delicious treats with a gooey caramel centre, chocolate top and a cookie base.

- 1 box (485g) chocolate chip cookie mix
- 1 cup caramel sweetened condensed milk
- Melted dark chocolate
- Melted white chocolate
- Butter or oil spray, for greasing cocottes or muffin trau
- Toppings of your choice (see below)
Method
- Preheat your oven to 180°C bake and grease four mini cocottes or a 12 cavity muffin tray
- Prepare the cookie mix as per pack instructions. Divide the cookie dough evenly into 4 pieces for the mini cocottes, or 12 if using a muffin tray. Roll into balls and flatten each ball into a disk and press tightly into each cavity of the cocotte or prepared muffin tin. Bake for 10 minutes or until golden brown.
- Meanwhile, in a large bowl whisk the caramel condensed milk until smooth. Set aside in the fridge.
- Once the cookie dough has cooked for 10 minutes, remove from the oven and while hot, use the end of a rolling pin or the base of a heat-proof ramekin or cup to press down the centre of each ball to resemble cups. Return to the oven and bake for another 5 minutes, then remove from the oven again and press while hot. Repeat for another two times if using mini cocottes. Set aside to cool to room temperature.
- Fill each cookie pie with caramel, then spread the dark chocolate over the top. Drizzle over the white chocolate and place in the fridge for a few hours or until the chocolate is set. Serve or keep stored in an airtight container in the fridge.

- Can I make this vegan or dairy-free? Yes, buy vegan chocolate chip cookie mix and coconut condensed milk (without dairy), and omit white chocolate. Make sure the dark chocolate does not contain milk solids.
- Can I make this gluten free? Yes, make sure to use gluten free chocolate chip cookie mix instead.
- What is condensed milk caramel? It is condensed milk cooked at a low temperature until it becomes a caramel—you can buy it labelled condensed milk caramel in stores.
