
BBQ fish and tomato salad

BBQ fish is the family-friendly dish, destined for your next outdoor dinner in the sunshine. Served with a summer tomato salad, with avocado, cucumber and red onion, it’s fuss free and effortlessly easy.
Ingredients
2 tsp dried mixed herbs
2 cloves garlic, minced
1 tsp ground paprika
4 firm white fish fillets of your choice
400g mixed tomatoes, cut into wedges or chunks
¼ red onion, finely diced
1 avocado, diced
1 cucumber, diced
Method
Preheat your BBQ or grill pan to medium-high heat. Pat the fish dry with a paper towel.
In a small bowl combine mixed herbs, garlic, paprika and a generous drizzle of oil. Season with salt and pepper.
Pour the mixture over the fish and spread on both sides. BBQ the fish for 3-4 minutes on each side or until golden brown and cooked through.
In a large bowl toss together tomatoes, red onion, avocado and cucumber with a drizzle of oil. Season with salt and pepper.
Serve BBQ fish with the tomato salad. Enjoy.
