In a hurry? Try Hoki curry.
- 2 fillets Sealord Hoki
- 2 tblspns red curry paste
- 200ml coconut milk
- 200ml water
- 200g green beans or snow peas
- small bunch coriander, roughly chopped
- Stir fry the curry paste in a little oil in a saucepan for 1 minute.
- Stir in the coconut milk with 200ml water.
- Bring to the boil.
- Add beans and hoki, reduce to a simmer.
- Cook for 5 minutes.
- Add fresh coriander.
- Serve with rice and a squeezed of lime.
