
Hoki curry

Ingredients
2 fillets Sealord Hoki
2 tblspns red curry paste
200ml coconut milk
200ml water
200g green beans or snow peas
small bunch coriander, roughly chopped
Method
Stir fry the curry paste in a little oil in a saucepan for 1 minute.
Stir in the coconut milk with 200ml water.
Bring to the boil.
Add beans and hoki, reduce to a simmer.
Cook for 5 minutes.
Add fresh coriander.
Serve with rice and a squeezed of lime.
