Hoki curry

Ingredients

  • 2 fillets Sealord Hoki

  • 2 tblspns red curry paste

  • 200ml coconut milk

  • 200ml water

  • 200g green beans or snow peas

  • small bunch coriander, roughly chopped

Method

  1. Stir fry the curry paste in a little oil in a saucepan for 1 minute.

  2. Stir in the coconut milk with 200ml water.

  3. Bring to the boil.

  4. Add beans and hoki, reduce to a simmer.

  5. Cook for 5 minutes.

  6. Add fresh coriander.

  7. Serve with rice and a squeezed of lime.
