
Quick honey soy chicken

This dish is your weeknight saviour. Quick, easy and budget friendly with only handful of ingredients but oh so delicious. Chicken pieces simmered in a simple honey soy sauce, served over rice and ready in 20 minutes.
Ingredients
600g boneless chicken, diced
⅓ cup honey
¼ cup soy sauce
3 cloves garlic, minced
2 tsp minced ginger
1 ½ cups white rice
Method
Cook the rice as per the pack instructions.
In a large bowl mix together the chicken, honey, soy sauce, garlic and ginger.
Heat a drizzle of olive oil in a frying pan over medium to high heat. Use tongs to add the chicken and cook for 1-2 minutes on each side.
Pour the remaining marinade over the chicken, lower the heat to a simmer and cook for 3-5 minutes, while stirring, until the sauce thickens.
Divide the rice between four bowls, top with the honey soy chicken and spoon over any remaining sauce.
