Chilli and basil mince stir fry
On the table in 20 minutes this speedy chilli and basil mince stir fry is the perfect fix for a weeknight meal in a pinch. Serve this delicious Thai-inspired dinner with jasmine rice and steamed Asian greens to make it a meal the family won't forget.

- 1 onion, sliced
- 500g pork or chicken mince
- 2 Tbsp soy sauce
- 2 Tbsp sweet chilli sauce
- 1 Tbsp fish sauce
- 1 tsp brown sugar
- Large handful basil leaves
Method
- Heat a drizzle of oil in a large frying pan over high heat and sauté the onion for a few minutes or until fragrant and translucent.
- Add the mince and stir fry for 5 minutes or until starting to brown, while breaking up with a spoon or spatula.
- Mix in the soy sauce, sweet chilli sauce, fish sauce and brown sugar. Stir fry for 3-4 minutes until the sauce has thickened and the mince is cooked through.
- Stir through three quarters of the basil leaves, spoon into serving bowls and garnish with the remaining basil leaves.
Top tip: Finish off this stir fry with a crispy fried egg on top of each bowl and fresh sliced chilli for extra heat if desired.
