Made for a stress free weeknight, this five ingredient cheats chicken fettuccine alfredo is great for all ages. With a ready-made alfredo pasta sauce, all that’s left is to grill the chicken and cook the pasta, easy as!

- 400g dried fettuccine pasta
- 400g chicken breast
- 325g alfredo pasta sauce
- ⅓ cup freshly grated parmesan
- Large handful parsley, roughly chopped
Method
- Cook the pasta as per pack instructions, reserving half a cup of the cooking liquid.
- Meanwhile, bring a drizzle of oil to medium-high heat in a medium frying pan. Pat the chicken dry with a paper towel and season with salt and pepper.
- Cook the chicken for 8-10 minutes on each side or until golden brown and cooked through. Set aside to rest.
- In a large pan, bring the alfredo sauce to a simmer. Once simmering, add the cooked pasta and half of the parmesan. Toss to coat, then stir through some of the reserved cooking liquid, if needed, to loosen the sauce. Season to taste with salt and pepper.
- Slice the chicken and serve on top of the pasta. Garnish with the remaining parmesan and parsley to serve.
Top tip: Pack in the veggies by adding in 2 cups of cooked mushrooms, broccoli florets, fresh spinach or asparagus into the alfredo sauce with the cooked pasta.
