Creamy Tomato Pasta with Tuscan Sausage
Not your average pasta night. This creamy tomato pasta is rich, comforting, and packed with flavour—perfect for when you want something quick, easy, and a little bit special.

- 1 brown onion
- 1 tbsp olive oil
- 1 x 6 pack New World made in-store pork & fennel sausages
- 4 tbsp crème fraiche
- 1 tbsp Pams Tomato Paste
- 1 tin Pams Tinned Tomatoes
- 500g of your preferred Pasta (we used rigatoni)
- Parmesan (optional) for serving
Method
1. Dice onion and add to a pan with olive oil on a low heat.
2. As that simmers start adding the sausage mince by removing the sausage casing and adding the meat to the pan. Break apart with your wooden spoon and mix well.
3. Add the tomato paste and mix, then the tinned tomatoes and mix again. Season well then leave to simmer.
4. Cook the pasta according to pack instructions and before draining take 50ml of pasta water.
5. Add the crème fraiche to the sausage sauce and then the pasta and pasta water, mix well.
6. Grate in plenty of Parmesan cheese for serving.
Hacks:
• The pasta water will help your sauce come together thanks to the starch from the pasta. It will also give your sauces a glossiness to them like you see in a restaurant!
• If you don’t have pork & fennel sausages, use any pork sausage and add 1 tbsp fennel seeds with the onion.
