One pot macaroni and mince

Inspired by American goulash, this one pot macaroni and mince is a tasty cheesy sensation. Tender pasta, cooked in a flavourful rich tomato and beef sauce is the highlight of this dish. It’s a crowd-pleasing favourite, ready in under 35 minutes.

Ingredients

  • 1 onion, finely diced

  • 2 cloves garlic, minced

  • 450g beef mince

  • 2 ½ cups beef stock

  • 2 cans (840g) tomato and herb pasta sauce

  • 500g Value macaroni elbows pasta

  • 1 cup grated tasty cheese

Method

  1. In a large pot, bring a drizzle of oil to medium-high heat. Sauté the onion and garlic for 3-4 minutes or until softened.

  2. Add the mince and cook for 4-5 minutes or until browned.

  3. Pour in the beef stock and pasta sauce. Season with salt and pepper, then stir to combine.

  4. Bring to a boil, then add the pasta and reduce to a simmer. Cook for 15-20 minutes or until the macaroni is tender, stirring regularly.

  5. Stir through the cheese then serve and enjoy.

Top tip: Toss two cups of frozen veggies in with the beef stock for a vegetable packed macaroni one pot. Finish the dish with a sprinkling of roughly chopped parsley.
