  • 4 pork shoulder chops, loin chops, steaks
  • Thyme and Garlic Rub
  • 1 Tbsp olive oil
  • ½ lemon
  • 2 garlic cloves, minced
  • 1 Tbsp fresh thyme leaves
  • Salt + pepper

Method

  1. In a small bowl combine olive oil, the juice and zest of the lemon, garlic and thyme.
  2. Place the pork in a shallow dish, pour over the lemon mixture and toss to coat. Cover and leave to marinate for at least 10 minutes. 
  3. Preheat your BBQ to medium-high heat.
  4. Remove the pork from the marinade and season with salt and pepper.
  5. Place the pork on the BBQ and cook for 6 minutes, then flip and cook for a further 2 minutes.
  6. Set the pork aside on a plate to rest for 2 minutes before serving.

 

Top tip: Ensure that the pork comes up to room temperature before you place it on the BBQ to ensure an even, quicker cook. This should take around 15-30 minutes.

Perfectly cooked pork can be achieved through the 6+2+2 method, outlined in the method. This includes 6 minutes of cooking on one side, before flipping and cooking for a further 2 minutes on the other side. Set aside to rest for 2 minutes, and then you have deliciously succulent pork ready to eat.
