
Quick pork and cabbage noodle stir-fry

A quick, savoury noodle stir‑fry with curried mince, tender noodles and crisp cabbage, finished with sweet chilli or kecap manis and crunchy toppings.
Ingredients
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 500g pork mince
- 1 tsp curry powder
- 2 x 72g packets 2-minute chicken noodles
- Boiling water
- ½ medium cabbage, sliced
- 2 tbsp sweet chilli sauce or kecap manis
- 1 spring onion, thinly sliced, to serve
- ¼ cup (35g) chopped cashews, to serve
- Long red chilli, deseeded, finely sliced, to serve
Method
- Heat a splash of oil in a large frying pan or wok over medium heat. Add onion, garlic and mince. Cook, stirring, for 4-5 mins or until mince is browned.
- Add the curry powder, seasoning sachets from the noodle packets and ¼ cup (60ml) water and stir to combine. Simmer for 2 mins.
- Meanwhile, place the noodles in a large bowl. Pour the boiling water over the noodles to cover. Set aside for 2 mins to soften. Drain.
- Place the noodles on top of the mince in the pan or wok. Top with the cabbage. Simmer, covered, for 2 mins or until the cabbage is tender and bright green. Toss to combine. Drizzle with sweet chilli sauce or kecap manis. Serve with spring onion, cashew and chilli.
