
Chicken caesar-inspired salad

It’s hard to go wrong with this classic chicken caesar-inspired salad! Assembled with fresh crunchy lettuce leaves, grilled chicken and parmesan it’s made for summertime. Featuring a cheat’s caesar salad dressing, for an even quicker meal solution.
Ingredients
2 thick slices of crusty bread, diced
2 chicken breasts, cut in half horizontally
1 clove garlic, minced
2 anchovies, finely diced
½ cup Pams classic whole egg mayonnaise
1 tsp dijon mustard
Juice of ½ lemon
50g parmesan cheese
1 large cos or Romaine lettuce, torn
Method
Preheat your oven to 180°C fan bake. Place the bread on a baking tray, drizzle over olive oil and season with salt and pepper. Toss to combine then place in the oven to bake for 8-10 minutes or until golden brown, tossing halfway through.
Bring a drizzle of olive oil to medium-high heat in a large frying pan. Season the chicken with salt and pepper and cook for 4-5 minutes on each side or until golden brown and cooked through. Set aside to rest before slicing.
To make the Caesar salad dressing, add garlic, anchovies, mayonnaise, dijon mustard and lemon juice into a small bowl. Grate half of the parmesan and add to the dressing, then mix until well combined. Season with salt and pepper to taste.
Place the torn lettuce leaves in a large bowl and toss it together with the Caesar salad dressing.
Transfer the lettuce to a serving platter and top with the sliced chicken and croutons. Shave the remaining parmesan and sprinkle over the top before serving.
