Browned butter asparagus and peas
Beautifully buttered asparagus tossed with peas and garlic is a winning side dish that’s too hard to resist. Garnished with fresh herbs, it’s easy, effortless and all made in one pan in under 15 minutes.

- 2 bunches asparagus, trimmed and halved
- 3 cloves garlic, thinly sliced
- 2 cups frozen peas
- 60g butter
- Handful of fresh herbs (we used parsley)
Method
- In a large frying pan, melt the butter over medium-high heat.
- Sauté asparagus and garlic for 5 minutes.
- Add peas and cook for 4-5 minutes or until the asparagus is tender and the butter has browned.
- Season to taste with salt and pepper.
- Garnish with fresh herbs, then serve and enjoy.
Top tip: Crispy shallots and fried diced anchovies made a tasty topping to these buttery asparagus and peas. Complete with a squeeze of lemon before serving for a touch of freshness.
