
Stone fruit caprese inspired salad

Ready in a matter of minutes, this stone fruit caprese-inspired salad is simply delectable. Made with fresh mixed tomatoes, stone fruits, mozzarella cheese, balsamic olive oil and basil.
Ingredients
500g mixed tomatoes (we used vine and cherry)
3 stone fruit (we used peaches and nectarines)
125g fresh mozzarella cheese
¼ cup extra virgin olive oil
2 Tbsp balsamic vinegar
Large handful of fresh basil
Method
Slice the tomatoes and cut the stone fruit into wedges.
Arrange the tomatoes and stone fruit on a serving plate or platter.
Top with torn mozzarella chunks.
Whisk together extra virgin olive oil and vinegar, drizzle over the salad.
Sprinkle over salt and pepper. Garnish with basil leaves, then serve.
Tips:
Sprinkle over red chilli flakes for a spicy version of this salad.
