
Apricot fudge slice

Morning tea with the whānau just got better with this no-bake apricot fudge slice. Sweet dried apricots, crunchy biscuit pieces and toasted coconut make this a delicious treat.
Ingredients
125g butter
½ cup brown sugar
200g sweetened condensed milk
1 cup chopped dried apricots
250g super wine biscuits, crushed
¼ cup desiccated coconut, toasted
1 ½ cups icing sugar
1 lemon
1-2 Tbsp hot water
Method
In a small saucepan, melt butter, brown sugar and condensed milk.
Remove from the heat and stir through apricots and biscuits.
Press into a greased 20cm x 30cm slice tin and set aside in the fridge while you prepare the icing.
To make the icing, in a medium bowl mix icing sugar with the juice and the zest of the lemon. Add enough hot water to create a thick spreadable consistency.
Spread the icing over the slice and sprinkle with toasted coconut. Place in the fridge to set, before cutting into squares.
