Apricot fudge slice

  • Prep time: 15 mins plus refrigeration

Morning tea with the whānau just got better with this no-bake apricot fudge slice. Sweet dried apricots, crunchy biscuit pieces and toasted coconut make this a delicious treat.

Ingredients

  • 125g butter

  • ½ cup brown sugar

  • 200g sweetened condensed milk

  • 1 cup chopped dried apricots

  • 250g super wine biscuits, crushed

  • ¼ cup desiccated coconut, toasted

  • 1 ½ cups icing sugar

  • 1 lemon

  • 1-2 Tbsp hot water

Method

  1. In a small saucepan, melt butter, brown sugar and condensed milk.

  2. Remove from the heat and stir through apricots and biscuits.

  3. Press into a greased 20cm x 30cm slice tin and set aside in the fridge while you prepare the icing.

  4. To make the icing, in a medium bowl mix icing sugar with the juice and the zest of the lemon. Add enough hot water to create a thick spreadable consistency.

  5. Spread the icing over the slice and sprinkle with toasted coconut. Place in the fridge to set, before cutting into squares.
