Kūmara animal fries

Shhh… this recipe is from our secret menu. Inspired by the fries on In’N’Out’s secret menu, we’re letting you in on the secret for our kūmara animal fries. These saucy, cheesey fries are too good not to share.

  • 800g orange kūmara
  • 1 onion, finely diced
  • ½ cup mayonnaise 
  • 2 Tbsp tomato sauce
  • 1 Tbsp finely chopped gherkins + 1 Tbsp liquid from the jar
  • 2 tsp mustard
  • 1 Tbsp butter
  • 4 Pams processed cheese slices

Method

  1. Preheat your oven to 190°C fan bake. Cut the kūmara into thin fries and place on a large baking tray. Toss with a little olive oil and season with salt and pepper. 
  2. Arrange in a single layer and bake for 25-30 minutes until crispy and cooked through, turning halfway. 
  3. Meanwhile in a small bowl mix together half of the diced onion, mayonnaise, tomato sauce, gharkins, gherkin liquid and mustard and set aside. 
  4. Melt the butter in a frying pan over medium heat and add the remaining diced onion. Cook while stirring occasionlly until the onion is brown and caramelised, about 10 minutes. 
  5. As soon as the fries are ready and come out of the oven, either leave on the oven tray or place onto serving plates and lay the cheese slices over top to melt. Spoon over the sauce and sprinkle with the caramelised onion. Enjoy immediately.

Top tip: For a short cut, use frozen kūmara fries and cook per the pack instructions.
