
Smashed dumpling tacos

An absolutely moreish meal or snack with a pork, prawn and chives dumpling filling grilled on a mini tortilla. Drizzle with sesame, soy sauce and top with pickled red onion, chilli, spring onion and toasted sesame seeds.
Ingredients
2 tsp sesame oil
⅓ cup soy sauce
200g pork mince
100g prawn meat, diced
2 Tbsp finely chopped chives
1 Tbsp minced ginger
1 Tbsp fish sauce
4 mini tortillas
Pickled red onion
Chilli, finely sliced
Thinly sliced spring onion
Toasted sesame seeds
Method
Make the dressing by stirring together a teaspoon of sesame oil and a quarter cup of soy sauce.
In a large bowl combine pork mince, prawn, chives, ginger, remaining sesame oil, remaining soy sauce and fish sauce. Mix until well combined, divide into four and press each portion onto a mini tortilla.
Bring a large frying pan to medium-high heat with a drizzle of oil. Working one at a time, place the tortilla meat side down in a pan and cook for 4-5 minutes or until golden and cooked through.
Flip the tortilla over and cook for a further minute before transferring to a plate.
Drizzle the dressing over each tortilla and top with pickled red onion, chilli, spring onion and sesame seeds.
