Smashed dumpling tacos

An absolutely moreish meal or snack with a pork, prawn and chives dumpling filling grilled on a mini tortilla. Drizzle with sesame, soy sauce and top with pickled red onion, chilli, spring onion and toasted sesame seeds.

Ingredients

  • 2 tsp sesame oil

  • ⅓ cup soy sauce

  • 200g pork mince

  • 100g prawn meat, diced

  • 2 Tbsp finely chopped chives

  • 1 Tbsp minced ginger

  • 1 Tbsp fish sauce

  • 4 mini tortillas

  • Pickled red onion

  • Chilli, finely sliced

  • Thinly sliced spring onion

  • Toasted sesame seeds

Method

  1. Make the dressing by stirring together a teaspoon of sesame oil and a quarter cup of soy sauce.

  2. In a large bowl combine pork mince, prawn, chives, ginger, remaining sesame oil, remaining soy sauce and fish sauce. Mix until well combined, divide into four and press each portion onto a mini tortilla.

  3. Bring a large frying pan to medium-high heat with a drizzle of oil. Working one at a time, place the tortilla meat side down in a pan and cook for 4-5 minutes or until golden and cooked through.

  4. Flip the tortilla over and cook for a further minute before transferring to a plate.

  5. Drizzle the dressing over each tortilla and top with pickled red onion, chilli, spring onion and sesame seeds.
