Gazpacho-inspired tomato soup

Try this gazpacho-inspired tomato soup the next time you're after a refreshing summer meal. Boasting fresh seasonal produce with mixed tomatoes, capsicum and cucumber. It’s packed full of vegetables and it tastes fantastic too with only six ingredients.

Ingredients

  • 800g mixed tomatoes

  • 1 capsicum, deseeded

  • ½ cucumber, peeled

  • ¼ red onion

  • 2 cloves garlic

  • 2 Tbsp red wine vinegar

  • ¼ cup olive oil

Method

  1. Blitz all the ingredients in a blender until smooth.

  2. Season to taste with salt and pepper.

  3. Place in the fridge to chill for a few hours.

  4. Serve and enjoy chilled.

Top tip:Top your tomato soup with a drizzle of extra virgin olive oil, freshly chopped herbs and bread or croutons.
