
Cheesy broccoli rice slice

Throw a piece of this cheesy broccoli rice slice in your tamariki’s lunch box for a filling meal they’ll enjoy. Combining corn, broccoli and carrot, this slice is packed with goodness that not only the little ones will enjoy. Make it a tasty meal with tomato relish and a leafy green side salad.
Ingredients
10 eggs, beaten
1 cup grated tasty cheese
2 cloves garlic, minced
2 tsp ground paprika
1 broccoli, chopped
1 can (400g) corn kernels, drained
1 carrot, grated
1 cup cooked brown or long grain rice
1 onion, finely diced
Method
Preheat your oven to 180°C fan bake. Grease and line a large baking dish or tray.
In a large bowl, combine eggs, cheese, garlic and paprika. Stir until well combined.
Add broccoli, corn, carrot, rice and onion. Season with salt and pepper.
Mix until well combined, then transfer into the prepared baking dish in an even layer.
Bake for 30 minutes or until golden brown and cooked through. Set aside to cool for 5 minutes before slicing as desired.
Pop these in the freezer once portioned for a treat to enjoy later.
Top tip: Add diced ham or bacon and fresh chopped herbs in with the rice to discover a new flavour sensation.
