Cheesy broccoli rice slice
Throw a piece of this cheesy broccoli rice slice in your tamariki’s lunch box for a filling meal they’ll enjoy. Combining corn, broccoli and carrot, this slice is packed with goodness that not only the little ones will enjoy. Make it a tasty meal with tomato relish and a leafy green side salad.

- 10 eggs, beaten
- 1 cup grated tasty cheese
- 2 cloves garlic, minced
- 2 tsp ground paprika
- 1 broccoli, chopped
- 1 can (400g) corn kernels, drained
- 1 carrot, grated
- 1 cup cooked brown or long grain rice
- 1 onion, finely diced
Method
- Preheat your oven to 180°C fan bake. Grease and line a large baking dish or tray.
- In a large bowl, combine eggs, cheese, garlic and paprika. Stir until well combined.
- Add broccoli, corn, carrot, rice and onion. Season with salt and pepper.
- Mix until well combined, then transfer into the prepared baking dish in an even layer.
- Bake for 30 minutes or until golden brown and cooked through. Set aside to cool for 5 minutes before slicing as desired.
Pop these in the freezer once portioned for a treat to enjoy later.
Top tip: Add diced ham or bacon and fresh chopped herbs in with the rice to discover a new flavour sensation.
