Easy spicy noodles

Simply delicious spicy noodles that pack a punch. They’ll be on the table in 10 minutes or less. Serve with a fried egg on top for a sensational meal.

Ingredients

  • 4 cloves garlic, thinly sliced

  • 2 tsp chilli flakes

  • 2 spring onions, sliced

  • 1 capsicum, thinly sliced

  • 400g udon noodles

  • 3 Tbsp soy sauce

  • 2 tsp rice wine vinegar

  • 1 tsp caster sugar

Method

  1. Bring a generous drizzle of oil to medium-high heat in a large frying pan.

  2. Sauté the garlic, chilli and spring onion for a minute or until fragrant, then add capsicum and cook for a further 3-4 minutes or until soft.

  3. Add the noodles and cook for a few minutes, then stir through the soy sauce, vinegar and sugar.

  4. Cook for a further few minutes or until heated through.

  5. Serve and enjoy!

Top tip: Seasonal vegetables (like carrot and broccoli) make a fantastic addition to these spicy noodles. Add them in with the capsicum and cook until tender before adding the rest of the ingredients.
