Loaded swede fries
Sweet and slightly nutty baked fries made from swede and loaded with a bunch of flavourful toppings. These vegetarian loaded swede fries are perfect for a cosy night in with the family with a melted cheesy topping, fresh herbs and cherry tomatoes.

- 4 large swedes, peeled
 - 1 Tbsp rosemary leaves, roughly chopped
 - 2 garlic cloves, minced
 - 2 tsp paprika
 - ½ cup grated cheese
 - ½ cup cherry tomatoes, quartered
 - ¼ red onion, finely diced
 - 3 Tbsp chopped chives
 
Method
- Preheat your oven to 200°C fan bake. Cut swede into 1.5 cm chips and place in a large bowl. Add a generous drizzle of olive oil, rosemary, garlic, paprika, salt and pepper. Toss to coat, then place on a lined baking tray.
 - Bake for 35-40 minutes, or until tender on the inside and golden brown.
 - Carefully remove from the oven and sprinkle the cheese over the top. Bake for a further 5 minutes, or until the cheese has melted.
 - Top with tomato and sprinkle over red onion and chives.
 - Serve and enjoy immediately.
 
Chef's tip
Dollop sour cream over your loaded swede fries and garnish with coriander leaves for a fun fresh topping.
