Loaded swede fries

Sweet and slightly nutty baked fries made from swede and loaded with a bunch of flavourful toppings. These vegetarian loaded swede fries are perfect for a cosy night in with the family with a melted cheesy topping, fresh herbs and cherry tomatoes.

  • 4 large swedes, peeled
  • 1 Tbsp rosemary leaves, roughly chopped
  • 2 garlic cloves, minced
  • 2 tsp paprika
  • ½ cup grated cheese
  • ½ cup cherry tomatoes, quartered 
  • ¼ red onion, finely diced
  • 3 Tbsp chopped chives

Method

  1. Preheat your oven to 200°C fan bake. Cut swede into 1.5 cm chips and place in a large bowl. Add a generous drizzle of olive oil, rosemary, garlic, paprika, salt and pepper. Toss to coat, then place on a lined baking tray.
  2. Bake for 35-40 minutes, or until tender on the inside and golden brown.
  3. Carefully remove from the oven and sprinkle the cheese over the top. Bake for a further 5 minutes, or until the cheese has melted.
  4. Top with tomato and sprinkle over red onion and chives.
  5. Serve and enjoy immediately.    

Chef's tip

Dollop sour cream over your loaded swede fries and garnish with coriander leaves for a fun fresh topping.
