Ingredients

  • 200g dried noodles

  • 1 cup frozen green beans, broccoli and sugar snap peas

  • ⅓ cup crunchy peanut butter

  • 1 Tbsp minced garlic

  • 2 Tbsp soy sauce

Optional:

  • Chilli Oil

  • Spring onion

Method

  1. Bring a pot of water to the boil, season with salt and cook noodles to packet instructions. Reserve a cup of pasta water. When nearly cooked, tip your frozen veggies into the pot and blanch for 30 seconds. Drain and set aside.

  2. In a large bowl, combine peanut butter, ginger, garlic, soy sauce and reserved pasta water and whisk.

  3. Add your cooked noodles and veggies and mix well to combine. Serve immediately.

Tip:

  • Spice up these noodles with a drizzle of chilli oil for a little kick. This recipe is a great base to add protein to, cooked prawns or shredded chicken would work great as an addition. Or to keep it vegetarian, a fried egg would be delicious.
