There are several ways to make sparkling wine, in its most basic form you can carbonate wine with carbon dioxide and at the other end of the scale you can create a second fermentation in the bottle, which produces lots of appealing toasty flavours. This seductive and very appealing bottle fermented wine has all the elegance you would expect from its more expensive French equivalents. It’s a blend of fresh apple and oyster shell aromas with a suggestion of freshly baked baguette. A long and generous finish shows the power of this wine.

Pairing Recommendation:

Bubbles not only add to celebration but are also great with food. Try with Asian inspired, particularly Vietnamese and Malayan dishes, antipasti, chips and dips, pizza and pasta and picnics. Serve with light lunches, BBQ’s, Mexican, lighter curry dishes and take to a pot-luck dinner.
