french toast roll ups

Ingredients

Method

Ingredients

  • 2 eggs
  • ¼ cup milk
  • 1 tsp ground cinnamon
  • 14 slices bread of your choice (we used wholemeal)
  • 1 cup cream cheese, softened
  • Seasonal sliced fruit of your choice (we used banana, apple and strawberry)

Method

  1. In a shallow bowl, whisk together eggs, milk and cinnamon.
  2. Cut the crusts off the bread slices if desired and use a rolling pin to flatten each piece.
  3. Spread a tablespoon of cream cheese on each slice of bread, top with sliced fruit and roll up tightly.
  4. Bring a large frying pan to medium heat with a knob of butter. Dip the rolls into the egg mixture, then cook for a few minutes on each side or until golden brown.
  5. Serve and enjoy.
Top tip: Drizzle maple syrup over your french toast roll ups and sprinkle with icing sugar before digging in.

Any leftover crusts can be blended into breadcrumbs and use to make hidden veggie cheeseburgers or BBQ meatball rolls.
