
Cheesecake french toast roll ups

Gather the tamariki in the kitchen over the school holidays to make a batch of these cheesecake french toast roll ups. They’re a quick and easy breakfast or snack filled with cream cheese and seasonal fresh fruit.
Ingredients
2 eggs
¼ cup milk
1 tsp ground cinnamon
14 slices bread of your choice (we used wholemeal)
1 cup cream cheese, softened
Seasonal sliced fruit of your choice (we used banana, apple and strawberry)
Method
In a shallow bowl, whisk together eggs, milk and cinnamon.
Cut the crusts off the bread slices if desired and use a rolling pin to flatten each piece.
Spread a tablespoon of cream cheese on each slice of bread, top with sliced fruit and roll up tightly.
Bring a large frying pan to medium heat with a knob of butter. Dip the rolls into the egg mixture, then cook for a few minutes on each side or until golden brown.
Serve and enjoy.
Any leftover crusts can be blended into breadcrumbs and use to make hidden veggie cheeseburgers or BBQ meatball rolls.
